Gnocchi
G2
The G2 is a piston-feed gnocchi machine. This machine presses the dough into the die without altering its structure. Its operation is simple and efficient; it has an anodized aluminum housing, and the parts that come into contact with the dough are made of stainless steel. It is equipped with a control panel and complies with current accident prevention regulations. The technology of this machine is also found in the individual gnocchi units, which are designed as modules so they can be used with other La Monferrina machines. The pressure-feed gnocchi unit is compatible with the P.NUOVA, CILINDRI, NINA, P3, P6, and P12 machines. Inserting the accessories is simple and convenient. Some units can also be used with other machines we manufacture.

Dryer EC/NG 25 – EC/NG 200
La-Monferrina dryers are available in four models with varying capacities and performance levels. All are constructed from bonded insulated panels to eliminate all internal and external heat sources. The panels are insulated with polyurethane injections and coated with PVC. The internal geometry of the drying cells is designed to maintain uniform airflow, temperature, and humidity, ensuring consistent drying throughout. The cells are equipped with a bidirectional ventilation system, electric or hot water heating, a moisture extraction device, and air intake valves. The entire drying cycle is monitored by humidity and temperature sensors. The automatic drying system features a PLC (Programmable Logic Controller) that allows the operator to select the optimal drying method for the specific pasta format via a touchscreen monitor. Optimal results are ensured by determining the final stage of the drying cycle based on residual moisture measurement.
Crepes
C1 round
The C1 is an automatic crêpe machine for producing round and rectangular crêpes with various ingredients: sweet, savory, with whole wheat flour, etc. The crêpe machine produces crêpes with a diameter of 195 mm or 320 mm.
C1 Square
The rectangular crepe machine produces a crepe strip with a width of 160 mm / 200 mm and the cutting length is adjustable via a timer (minimum length 20 mm).
C3
The C3 is a machine for producing round crêpes of varying diameters according to customer specifications, designed for high-volume fresh pasta laboratories. The machine is equipped with a 50-liter batter tank, and the product is fed to the machine via a dosing pump.
C4
The C4 is a machine for producing 640 mm wide crêpe strips, designed for high-performance fresh pasta laboratories. The machine is equipped with a 50-liter batter hopper, and the product is fed to the machine via a dosing pump.
